Bourbon Bacon Jam

Ingredients

  • 1 pound bacon, cut into small pieces

  • 1 large yellow onion, chopped

  • 2 shallots, diced

  • 2 teaspoons minced garlic

  • ½ cup brown sugar

  • ¼ cup maple syrup

  • 3 tablespoons apple cider vinegar

  • 1 teaspoon chili powder

  • 1 teaspoon red pepper flakes

  • 3 tablespoons bourbon or whisky

Directions

  • Cook bacon in a medium saucepan on medium heat until crispy.
  • While bacon cooks, line a plate with paper towels.
  • Transfer cooked bacon to the plate and set aside.
  • Retain 4 tablespoons of bacon grease in the pan, discarding the excess.
  • Add onion and shallots to the pan; lower heat to medium-low.
  • Caramelize the onions for 15-20 minutes, stirring frequently.
  • Stir in garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, and the set-aside bacon.
  • Take the pan off the heat and mix in the whiskey.
  • Return to heat and simmer for 10-12 minutes until it resembles jam consistency.
  • Serve either warm or at room temperature. Reheat if chilled.
