Bourbon Bacon Jam

1 pound bacon, cut into small pieces
1 large yellow onion, chopped
2 shallots, diced
2 teaspoons minced garlic
½ cup brown sugar
¼ cup maple syrup
3 tablespoons apple cider vinegar
1 teaspoon chili powder
1 teaspoon red pepper flakes
3 tablespoons bourbon or whisky
Directions
- Cook bacon in a medium saucepan on medium heat until crispy.
- While bacon cooks, line a plate with paper towels.
- Transfer cooked bacon to the plate and set aside.
- Retain 4 tablespoons of bacon grease in the pan, discarding the excess.
- Add onion and shallots to the pan; lower heat to medium-low.
- Caramelize the onions for 15-20 minutes, stirring frequently.
- Stir in garlic, brown sugar, maple syrup, apple cider vinegar, chili powder, and the set-aside bacon.
- Take the pan off the heat and mix in the whiskey.
- Return to heat and simmer for 10-12 minutes until it resembles jam consistency.
