Vanilla Ice Cream
Optional garnishes: Fresh mint leaves, shredded coconut, or a drizzle of the glaze or caramel sauce
Directions
- Prep the Pineapple: Start by peeling your pineapple and removing the ends. Keep it whole and if using the rotisserie attachment, spear and secure.

- Make the Glaze: If you’re doing our Vanilla Bourbon glaze you’ll find the recipe here. Otherwise crack open the bottle of your favorite glaze!
- Set the Fire: If you’re using a rotisserie attachment, prep the grill with coals on either side of the grill. If grilling indirect without a rotisserie, set your fire to one side as you’ll be cooking indirect.
- Coat the Pineapple: Brush the glaze generously over the pineapple slices or whole pineapple, making sure it’s well coated.
- Rotisserie Time: Place the pineapple on your rotisserie spit and secure it tightly. If you’re using slices, thread them carefully to ensure they stay in place.
- Grill: Set your grill to medium-high indirect heat. Place the rotisserie spit on the grill and let the pineapple cook for about 30-40 minutes, basting occasionally with any remaining glaze. The pineapple should be golden brown and caramelized.
- Serve: Remove the pineapple from the grill and let it cool slightly. Slice it up and serve warm with a generous scoop of vanilla ice cream.
